Taiwanese Milk Fish is a delicacy that is seriously underated. Being a delicate tropical fish, Milk Fish is not easy to raise, especially in winter. However, Taiwanese are lucky enough to enjoy this rare delicacy as it is not rare at all in Taiwan. If Taiwanese people have more self respect, it absolutely deserves a higher place than eel in foreign market such as Japan.

Like Pike in French cusine, guomets know the most delicate meat is around bones. Worry not. These days, Taiwanese are sophisocated enough to debone the belly, and make the rest of the fish into broth or fish balls.
